Grilled Squash, Zucchini and Brie Sandwiches

Ingredients
  • 2 zucchini or medium yellow squashsliced lengthwise into 1/2-inch-thick slices
  • 2tsp extra-virgin olive oil
  • 1/2tsp coarse sea salt
  • 1/4tsp freshly ground black pepper
  • 4slices round country breadsometimes known as boule
  • 1clove garlic, split
  • sprinkling of nutesalmonds, pistachios, walnuts, pecans, etc.
  • 1cup sunflower, radish, or other sprouts
Instructions
Preparation
  1. Prepare a grill for medium-high-heat cooking or preheat the broiler.
  2. Brush squash with oil and sprinkle with salt and pepper.
Grilling
  1. Grill or broil, turning once or twice, until tender and nicely browned, 6 to 8 minutes. Set aside.
  2. Grill or broil bread until just lightly browned, about 1 minute per side.
  3. Cover tops of slices with Brie; place on a cool part of the grill and cover the grill (or broil) until the cheese is somewhat melted.
  4. Top with grilled squash, tomatoes and sprouts. Cut each sandwich in half and serve.
